Objectives: How to incorporate and execute whole grain recipes in order to meet the new requirements.
Description: Participants will be introduced to whole grains such as quinoa, wheat berries, barley and various rice. Cooking demonstrations will include proper methods for cooking whole grains and recipes that have proven successful in K-12 across the country as schools ease into the new regulations.
Coleen Donnelly - K-12 Corporate Chef
Coleen Donnelly has worked for 15 years in school lunch reform. In her current position as K-12 Corporate Chef for InHarvest, she develops recipes and menu solutions for schools across the country looking to incorporate healthy whole grains into their menus.
Timothy Cipriano - VP of Brand Development
Timothy Cipriano has been a pioneer in School Nutrition tying together real food in schools and teaching students where their food comes from. Chef Tim is currently the VP of Brand Development for Hooray Puree, he works with schools nationwide to add vegetable purees to existing recipes to reduce tray waste.
